When you are using a global cool down, you can then use this time to get away from a sticky situation that you have with any mobs. This can help aid your casting without worrying as much about the rush of enemies for a couple of seconds. Just strafe out of the way and avoid walking backwards.
Another key point about playing as the Holy Priest is your buffs. Make sure that your buffs stay up as they help you out more than you might think.
